Kids made it: Cheesy broccoli and baked corn dogs

It’s summer time.  Kids are home from school.  Looking for something fun to get them off the couch or away from the computer?  Why not bring ‘em into the kitchen?

No pups required Baked Corn Dogs (makes 7 corn dogs)
For this recipe you’ll need a corn stick pan, you can find these at Wal-Mart for around $10
Ingredients
3 tablespoons vegetable oil
½ cup corn meal
½ cup all purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon black pepper
1 egg
½ cup Buttermilk
½ cup grated cheddar
14 cocktail sausages
Directions
1- Preheat oven to 400 F
2- Lightly grease corn wells of corn stick pan with some oil from the ¼ cup above with pastry brush or fingers, put pan in oven to heat for at least 15 minutes while you make the rest of the dough
3- Combine remaining oil, cornmeal, flour, baking powder, salt, pepper, buttermilk, egg and cheese in a mixing bowl. Stir with fork until combined.
4- Remove hot pan from oven and using half the batter, spoon around three tablespoons of batter into each well. Add two cocktail dogs to the center of each well.
5- Spoon remaining batter into each well, dividing evenly, to cover dogs.
6- Bake approximately 15-20 minutes or until golden brown.
7- Remove pan from oven. Allow to cool for 3 minutes before turning corn dogs on to wire rack.
While Corn dogs are cooking start the broccoli….
Cheesy Broccoli (4 servings)
Ingredients
1 large bunch broccoli (1.5 lbs)
1 teaspoon salt
¼ cup all purpose flour
4 tablespoons unsalted butter (1/2 stick)
black pepper to taste
3 cups milk (whole or 2% works best)
2 cups grated mild cheddar cheese)
Directions
1- Trim bottom 3-4 inches from broccoli bunches
2- bring some water to a boil (enough to steam the veggies to help keep their nutrients), add broccoli cover and steam 7 minutes or until desired tenderness- mom can check with a fork
3- Drain in colander (be sure to use oven mits and drain away from you!)
4- in a medium sauce pan, melt butter over medium heat.
5- Add the flour, 1 teaspoon salt, pepper and whisk continuously for 2 minutes.
6- Whisk in milk, and bring sauce to a boil, whisking occasionally.  Reduce heat to medium-low and simmer, stirring occasionally for 2 minutes.
7- Combine broccoli with cheese sauce, stir, and enjoy!

    where do you get buttermilk these days? And what is your substitute? I know buttermilk is making a comeback but I don’t buy it.

    Great question!

    Instead of buying you can make your own:

    Prep Time: 5 minutes
    Ingredients:
    Milk (just under one cup)
    1 Tablespoon white vinegar or lemon juice
    Preparation:
    1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.

    2. Add enough milk to bring the liquid up to the one-cup line.

    3. Let stand for five minute. Then, use as much as your recipe calls for.

    It’s cheaper than buying butter milk too!
